Lemon Turmeric Fat Balls

Need a quick snack to pick you back up during a long day at work, traveling with friends, or even just laying endlessly on a beach? These golden balls are loaded with healthy fats, fiber, and anti-inflammatory properties so you can heal & fuel your body at the same time. And not to mention they taste amazing! Also, they have no added sugar. I know, can it get any better?

PREP TIME: 10 minutes

TOTAL TIME: 40 minutes


WHAT YOU NEED:

1/2 cup raw cashews

1/4 cup pumpkin seeds 

1 tbsp chia seeds 

1tbsp flax seeds

2 tbsp turmeric (I also added a few tbsp of REBBL lemon tart turmeric exilir, so you can add some coconut sugar if you don’t have this on hand and you want to sweeten it a little bit)

1 tbsp sunflower butter (no added sugar)

Zest of 1 lemon

1/2 freshly squeezed lemon juice 

INSTRUCTIONS:

Combine ingredients into a blender or food processor

Pulse/blend until everything is broken up and there is no more chunks (add some coconut milk if it is too thick)

Scoop out and roll into balls

Place on Tupperware or baking pan with wax paper 

Place in freezer for 30 minutes then enjoy!

Store in fridge or freezer
