It’s funny to me when people think that eating healthy means you always have to eat veggies and fruit. Um wrong. We can enjoy delicious dessert too! I have a major sweet tooth and chocolate is my biggest weakness, so these peanut butter fudge balls are great for satisfying my body’s wants while still fulfilling my body’s needs.
Over these last few weeks, however, I have become more aware of my sugar intake as I have been trying to stabilize my blood sugar levels. I think that maple sugar, honey, and coconut sugar are all okay and great for sweeteners, but once I realized how much I was consuming a day (especially with 4 cups of tea a day), it was an overload. I didn’t realize it but blood sugar levels are very important to keep stable in order for our hormones and eventually organs/glands to function correctly.
These No-Bake Peanut Butter Fudge Cookies are absolutely addicting and you don’t have to feel guilty after indulging 3 or 4 at a time! Filled with healthy fats and not overloaded with sugar, these cookies are great for snacking with you want something sweet!
ALL YOU NEED IS:
All-Natural Peanut Butter
Unsweetened coconut flakes
Dark chocolate bar or cocoa nibs (be careful of getting a chocolate bar with lots of added sugar)
PREP TIME: 10 minutes
TOTAL TIME: 40 minutes
*low sugar, vegan, and gluten free*
1 cup cashews
1/2 cup oats
1/2 cup creamy peanut butter (I used Woodstock organic peanut butter)
1/4 cup unsweetened coconut flakes
1/2 teaspoon cinnamon
1 dark chocolate bar broken or 1/3 cup cocoa nibs
Combine all ingredients in blender or food processor
Pulse/blend until creamy (this will be thick at first so it might take a few minutes)
Add more chocolate afterwards if you want extra chunks
Using spoon or cookie dough scooper, scoop dough into a pan or Tupperware with wax paper
Put in freezer for 30 minutes to set and enjoy!
Store in fridge or freezer
