Healthy Cinnamon Banana Bread

First time trying banana bread and let me tell you this recipe will be made again soon! It is so sweet, melts in your mouth, and good for you! You would think that a slice of this bread would be a guilty pleasure but it’s not! Just pure pleasure. I used coconut flour, no butter, no added sugars, so you don’t have to feel bad eating this for your breakfast, after-noon snack, AND dinner. It is also gluten-free, grain-free, dairy-free, and vegetarian!

 

What you’ll need:

 

Wet Ingredients

3 medium/large ripe bananas mashed

1/2 cup of natural peanut butter of choice (make sure no added sugar or oils!! I used richard’s creamy 100% peanut butter)

3 eggs or sub for flax eggs

1 tbsp 100% pure maple syrup

1 tbsp coconut oil

Splash of vanilla extract

 

Dry Ingredients

1/3 cup + 2 tbsp coconut flour

1/2 tsp of baking powder

Lots of cinnamon

 

Instructions

  1. Preheat oven to 350 degrees and spray your bread dish with coconut oil OR line it with parchment paper
  2. In a mixing bowl, mix together wet ingredients
  3. Once creamy, add in dry ingredients then mix together until well combined (make sure there is no chunks of coconut flour in the mixture)
  4. Pour into bread dish and bake for 20 mins
  5. After 20 minutes, top banana bread with more banana coins or any other topping you’d like
  6. Bake for another 20 minutes then cool for a few minutes and enjoy!
  7. Will last about 5 days in the fridge or you can freeze for longer
